A quick introduction

Sweet potatoes are most commonly grown for its tubers, however the plant also produces delicious leafy greens. These greens are quite similar to spinach and chard and can be eaten raw, but are most commonly cooked. Sweet potato leaves have short green stems, and green leaves that are are almost maple or vine like. Some stems can be tough so you might want to discard parts of it.

Storage

As with all leafy greens we recommend washing sweet potato greens in cold water (we do pre-wash it at the farm), then dry it and store in a closed container in the fridge. This way it will keep for almost a week.

Suggestions for preparation

You can treat sweet potato greens in the same way as spinach or chard. Chop to desired size and separate the thicker tougher stems if necessary. Sweet potato greens can be simply blanched, or cooked by sautéing them in oil, garlic and ginger.
