Spring onions, or scallions, are very popular in asian cuisine. Raw, they give a fresh finish to fried rice, noodles, and in dipping sauces for dumplings. You can also use them to make flaky scallion pancakes, or up your noodle game by infusing your stir-fry oil with scallions and extract all of their aroma.
