Savoy cabbage is composed of beautiful wrinkled bright green leaves. Its flavour is similar to white cabbage, but the sturdy leaves have a very different texture.

Suggestions for preparation

When raw or just lightly blanched, the leaves retain their sturdy and strong structure, so they can be used as wraps. To prepare savoy cabbage, halve it to chop or shred. If you keep the head whole and cut it into large quarters, use it for roasting or grilling until the leaves become caramelized so that the cabbage can release its sweeter notes.
