Brussels sprouts

Brassica oleracea var. gemmifera

Similar veggies:

White cabbage, red cabbage, oxheart cabbage

A quick introduction

As brussels sprouts take a full season to mature and take up a lot of space in the garden we have decided to stop growing brussels sprouts for the moment, we rather use our garden space for more productive crops so that we can provide our members with more vegetables. We might grow them again in the future though.

Most people are surprised when they see brussels sprouts growing in our garden for the first time. These miniature cabbages grow on long funny looking stalks and take almost a full season from start to harvest. The best way to enjoy brussels sprouts (in our opinion) is by roasting them until they're caramelized and crunchy.

Storage

Keep well in a paper bag in the fridge

Season

Fall and winter

Suggestions for preparation

Brussels sprouts are fast to prepare and halved roasted sprouts make for nice additions to stir-fries & salads. We like to make a quiche with nutmeg, caramelized onions and dark roasted brussels sprouts. They also pair exceptionally well with apples, bacon & walnuts.

Recipes

Master the technique of roasting brussels sprouts to umami perfection.

Grilled cabbage (replace with roasted brussels sprouts) with a spicy Thai dressing

Replace the cabbage for roasted brussels sprouts and make this quiche with caramelized onion (the recipe uses skim milk but we see no reason for that :) )
